I confess that I love bacon. In fact, this BLT Weight Watchers Salad that my friend Andrea from Saving Every Day For Dinsey is a favorite salad that features my love of bacon. Most people don't think that bacon can be a healthy choice, but when you use it for just a bit of flavor in a great healthy dish like this salad, it can be a wonderful accent.

A simple chopped salad like this one is a great choice for a Weight Watchers salad for lunch or dinner when you have only a few points left. This recipe may be something you already have in your menu plan on a regular basis. If not, this dish is a perfect choice that features a lightened dressing and some great fresh ingredients. Getting kids and picky eaters to enjoy a salad is much easier with this low-carb BLT salad recipe.
This recipe uses mixed greens. You could also use a classic iceberg or even spinach for this salad. My opinion is that whatever greens you choose should be something with nutritional benefit, but mostly something your family will actually eat. For us, mixed greens and spinach are the go-to choices. For some, the iceberg doesn't offer much nutrition, but it is a carrier for the other ingredients. No matter what greens you use, make sure to rinse them well. I like using a salad spinner so the greens don't end up soggy, but I can still manage to have it cleaned well and easily.
Ingredients
1 cup grape tomatoes, quartered
⅛ teaspoon salt
½ cup light mayonnaise
¼ teaspoon black pepper
1 green onion, sliced
1 tablespoon red wine vinegar
8 strips center cut bacon, cooked
8 cups mixed greens
Note: I often prefer using an avocado oil mayonnaise over other traditional mayonnaise. It's a personal preference, but you can choose whatever brand or type you prefer. If you do use that, you'll need to refigure the points for this recipe.
How to Make a Bacon Lettuce Tomato Salad
Add the tomatoes and salt to a large bowl. Toss to combine and let sit for five minutes.
Add the mayonnaise, green onion, red wine vinegar, black pepper, and stir to combine.
Roughly chop the cooked bacon, and add it to the bowl. I like to reserve a few pieces to sprinkle on top of the finished salad.
All that remains is to toss the dressing with the lettuce. I suggest waiting to do that until just before you're ready to serve, so the lettuce doesn't get wilted.
Once you've added the lettuce, taste and adjust the salt, pepper, and vinegar to your liking.

We also tend to add in other vegetables sometimes making it a more traditional salad, but you can mix and match any ingredients you like. Croutons make it less of a low-carb salad but go nicely for added crunch. I also love mixing in some cucumber, edamame, or even broccoli!
