Broiled Salmon with Dill and Capers

Cooking fish is one of those things I used to be so afraid of doing. I was worried it would be underdone, or perhaps even overdone. This recipe is pretty easy to manage and imparts a lot of flavor on a dish that is perfect for your diet. We try to find wild salmon when we can, and given the price, I usually buy in bulk and portion for the freezer. This broiled salmon recipe is for fresh filets, but you can thaw frozen in your refrigerator overnight and follow the directions as listed below.
Ingredients for Broiled Salmon:
4 4oz. Salmon Fillets
¼ Teaspoon Cayenne Pepper
¼ Teaspoon Salt
¼ Teaspoon Black Pepper
1 Teaspoon Dill
1 Tablespoon Capers
Directions for Broiled Salmon:
Preheat oven to 375 degrees.
Spray a baking sheet with nonstick cooking spray. You can alternately line with parchment paper or a silicone baking mat if preferred.
In a small bowl, mix the cayenne, salt, pepper, and dill together.
Sprinkle seasonings generously on all sides of fillets
Place salmon fillets on the baking sheet and then top with capers
Bake at 375 degrees for 12 minutes.
Turn over and set the oven to broil to cook for additional 3-5 minutes. Watch to make sure the salmon filet is browning and not burning.

For added flavor in this recipe, you can easily cook the this broiled over cedar chips or even toss it on the grill wrapped in foil to steam it. Salmon is a very forgiving fish and pairs well with pasta and cream sauces. If you are watching your calorie intake we recommend serving this broiled salmon recipe alongside some brown rice with fresh steamed vegetables and a little teriyaki sauce for a really tasty and satisfying meal.
