Don't think if you are trying to eat healthier this season that you cant indulge in some of your favorite Fall flavors. Pumpkin pie is one of the most popular of these cool weather treats. I deconstructed it and turned it into this Weight Watchers Baked Pumpkin Pie Eggroll recipe. You get all the delicious flavor and texture of a pumpkin pie but without the level of guilt that accompanies it. With a creamy pumpkin pie spiced center and a crunchy "crust" all the way around you wont feel deprived at all!
WEIGHT WATCHERS BAKED PUMPKIN PIE EGGROLL
Ingredients:
¾ cup pumpkin purée
¼ cup greek yogurt
2 Tbsp. Brown sugar
1 tsp. pumpkin pie spice
Optional:
Cinnamon for sprinkling
Directions:
Preheat oven to 350 degrees
Whisk together pumpkin, yogurt brown sugar, and pumpkin pie spice until well combined.
Spread out egg roll wrappers with one point directly to you and one pointing away and place ¼ cup of mixture across the center.
Fold up the bottom corner, wet your finger and run it across the edge of all remaining sides. (This acts as a glue.)
Fold sides inward, pressing the egg roll wrapper together lightly.
Tuck and roll the final corner, pressing wrappers well to each other to form a seal, add a touch more water if needed to make sure its sealed, or your filling will leak out.
Place eggrolls on a parchment paper lined or non stick sprayed baking sheet, or a pizza stone. Silicone baking mats on cookie sheets work great as well. Coat the tops of your eggrolls lightly with nonstick spray to crisp them up a bit. Bake for 11-13 minutes until crisp and browned.
If desired top with fat free cool-whip and a sprinkling of cinnamon to finish them off!
