These Homemade Whole Wheat Pizza Pockets area hit in our house for back to school! Back to school does not have to mean plain old PB& J in the lunchbox, you can get creative AND give them a pretty healthy lunch by prepping ahead on Sunday to quickly make 8 Whole Wheat Pizza pockets. The kids love to help me put these together too and are much more willing to try exotic ingredients like"bell peppers" and "mushrooms" when they have some control over creating it. This batch we made simple with just sauce, cheese, and mini pepperoni but the sky is the limit when creating your Pizza Pockets- use your favorite meats, cheeses, and veggies to create a yummy and healthy lunch that will not come back home uneaten. The dough can be used in many ways and is quick and easy to toss together in your mixer, no waiting for it to rise!
Homemade Whole Wheat Pizza Pockets
Ingredients:
1 ½ cups whole wheat flour
1 ½ cups all-purpose flour
1 pack active dry yeast
1 cup very warm water
2 tsp. sugar
1 tsp. salt
1 Tbsp. olive oil
Directions:
Preheat oven to 35o degrees.
Place warm water,sugar, and yeast in the bowl of your stand mixer and allow it to sit for about 5 minutes, yeast will become foamy.
With the paddle attachment on your mixer add flours, salt, and olive oil until dough begins to pull away from sides, and the texture is smooth-you may need to add a bit more flour.
Flip dough onto a floured surface and knead a few times. Divide dough into 8-10 balls.
Roll each to ⅛th" thickness, spread sauce over dough, and cover half with your choice of toppings, leaving a ¼" edged all around. Fold in half and use a fork to crimp and seal edges. Poke 1-2 air vents on top. Place on baking sheet.
Bake for 16-18 minutes until they begin to turn golden brown.

I love that these are homemade and don't contain all the nasty preservatives of other frozen pizza products. Being able to customize them for everyone in your family makes it so easy if you have picky eaters. Adding veggies, different meats or even a few pits of pineapple in these homemade whole wheat pizza pockets makes them unique and even healthier.
Make large batches of these and freeze them for future meals an lunches. Pack in your kids lunch box for back to school, or simply enjoy them with your family for a tasty evening meal everyone will love!

Looks yummy! I am totally going to make some of these for school lunches. Any idea how they are cold? My 8 year old would love these, but I don't think he has access to the microwave at school. That being said, he loves cold pizza, so I don't know that it will be an issue. lol 🙂
