This "miracle" muffin is so easy to make and perfect for mixing up in minutes for a fast breakfast. It's ideal for those following many healthy lifestyles, including the popular WW programs.
You can make all kinds of muffin recipes with this basic ingredient. Kodiak Protein Packed Flapjack & Waffle Mix. The thing is, this stuff is just amazing. It's like almost any other ready-made pancake mix out there, with one exception. This one is loaded with protein. That means that it is lower in SmartPoints than some other options out there, but mostly that it keeps you full for longer. Huge win in my book!
This is a basic blueberry muffin recipe, but you can easily add a bit of Stevia to it if you prefer something sweeter. No, it doesn't end up as cake-like in texture as a traditional muffin. I admit, calling it a muffin may be a bit of a stretch. However, if you are wishing for an easy-to portion and easy-to-grab and-go breakfast or snack - this is ideal.
Ingredients
1 ½ cups Kodiak Power Cakes dry mix
½ cup fresh or frozen blueberries
1 banana
½ cup water
½ teaspoon ground cinnamon (optional)
How to Make WW Blueberry Muffins
Preheat oven to 350 degrees.
Spray muffin tin or silicone muffin pan with non-stick spray.
Mash banana in a medium bowl and mix in water, pancake mix, and cinnamon.
Fold in blueberries.
Add ¼ cup batter to each muffin cup.
Bake at 350 degrees for 12-15 minutes or until golden.

There are a ton of Kodiak Mixes available that can create a super fun and easy options for breakfast and snacks. If you follow the Mudhustler Facebook Page, you'll see many of his special creations using the mix for waffles, donuts, and similar. I prefer using just the basic ingredients to create my muffins and don't do well with the added protein powder in them that he recommends. So, my recipes here are a bit more simplistic but especially tasty.

I tried this recipe but with 1/4 cup per muffin it only makes 6. very tasty but I doubled it to get 12 small muffins.

I made into mini muffins and doubled the blueberries. I prefer the sugar from fruit vs. a sugar substitute and they were very moist. Very dense and filling. I think it will be a great quick breakfast.

hi, I added a whole egg. I only make half a recipe I double the blueberries and just divided into 6 small muffin tins
still came out to one point to and made it more actual muffin like

Very good muffins! I tried them the first time with the Kodiak blueberry lemon mix so I didn’t add fresh blueberries and instead added a cup up Granny Smith apple (cinnamon & nutmeg as well).
I just made them again with fresh blueberries and the cup up Granny Smith apple and even better! The fresh blueberries definitely sweeten the muffins. No artificial sweeteners needed imo.

Just here to say thanks for this recipe. I am a nursing mother on weight watchers and I have to eat a lot everyday to keep my milk supply up. I have been baking 2 dozen of these each week and reach for them all day long when I need something but baby won’t let me do anything. They come together in the bowl so fast that I have time to make them even when baby is fussy. These have been a lifesaver, kodiak should give you a commission lol. Thank you!

I doubled the recipe and used muffin top pans. The doubled recipe made 52 muffin tops, so every 2 are one point. I did add another 1/4 cup water to make the mix more spreadable. Otherwise, in the muffin top pan, what you see is what you get.

I made six nice sized muffins. I added vanilla, egg, monkfruit sweetner. I thought they were very good but believe it or not needed salt and more sweetner. I also sprinkled monkfruit sweetner, cinnamon on top and it all of them with a little fake spray butter. Let them cool in the silicone liners and flipped them out on a tea towel. I am wondering how they would be with diced up fresh strawberries? Enjoy! and thank you.

I made 6 of the large muffins. Instead of a mashed banana, I used 1/2 cup unsweetened applesauce. I also added 6 packs of Stevia. They are delicious. I have also used raspberries instead of blueberries.

I read all your comments and decided to try the recipe. I am a WW member so I’ve experimented a couple of these Kodiak recipes before. I added 1 tsp of almond extract and the rhind of a lemon to my mashed bananas, along with an egg and ½ tsp salt. I used 1 cup of blueberries too. I made two batches of regular sized muffins (so 2 pts each), as for me I would only be looking for a 2nd mini muffin anyways. They came out really good. With this base, I think I am going to try making carrot muffins too. Thanks a lot.

I added a 1/4 cup of unsweetened apple sauce in addition to the banana and 1/2 cup of water the recipe called for. Made 9 standard size muffins and they were more cake like, less dense. LOVED them!
