I much prefer eating real foods. Honestly, I like to avoid processed items as much as possible. However, let's get real - chocolate cake is something you want when you want it, and you don't want to spend an hour in the kitchen making it. You also probably don't want to always have everything on hand for it. So, this easy and low-ingredient sugar-free chocolate cupcakes recipe is going to be a new favorite.
Ingredients for Sugar-Free Chocolate Cupcakes:
1 Sugar-Free Chocolate Cake Mix
1 cup Pumpkin Puree
1 cup Water
Icing for Sugar-Free Chocolate Cupcakes:
1 8oz. container Sugar-Free Whipped Topping
1 package Sugar-Free Fat-Free Chocolate Pudding Mix
Directions for Sugar-Free Chocolate Cupcakes
Pre-heat oven to 350 degrees.
Spray muffin tin or silicone muffin pan with nonstick spray or line with cupcake liners and set aside.
In a large bowl (I use my medium Tupperware® Thatsa Bowl), mix together cake mix, pumpkin, and water until well blended.
Pour into prepared muffin tins. I use a ¼ cup measuring cup to do this, or you can use an ice cream scoop or spoon. I try to fill them around ½ full as they will expand and rise when cooking.
Place in oven and bake for 12-15 minutes or until a toothpick inserted in the middle of cupcakes come out clean.
Remove from oven and place on cooling racks to cool before icing.
While the cupcakes are cooling, mix the powder sugar-free pudding mix into the whipped topping until well combined. This will thicken the topping and make it easy to pipe or spread onto the cake.

I picked up a simple icing kit online to use for cupcakes like this. I just add a swirl of icing on top of each to make a perfect topping that will stand up easily for parties, or events. This batch will make a bit extra icing, but the SmartPoints have been calculated within the Recipe Builder on Weight Watchers and include the entire amount of icing for the recipe. The difference in points is negligible.

Could not find Sugar Free Cake Mix so I used Sugar Free Brownie Mix. Added one egg white and one tsp. of baking powder. They are wonderful.
