A few years ago, a friend introduced me to the wonderful Cake Mix Cookies. These dandy little creations turn the always handy cake mix into a fast and simple cookie in minutes. Since then, I have created dozens of versions and fallen in love with how easy they are to make a fast and tasty cookie. This Weight Watchers Valentine's Day Cake Mix Cookies Recipe is just another of my favorites.
Let's face it, the Weight Watchers Beyond The Scale Program teaches us that we are supposed to choose healthier foods to fuel our body. So, they place SmartPoints values on foods like this at a much higher rate than heatlthier foods. I can have a lot of lean grilled chicken for the same SmartPoints as I can have one single cookie from this batch. That doesn't mean that I won't want to indulge during the holiday. So, while I made some special cookies for my son and his friends, I decided to share one of my friend's recipes here with you with her permission, and do the calculations for SmartPoints so you can easily figure how to add this into your calculations for the day.
Weight Watchers Valentine's Day Cake Mix Cookies

I use a basic white cake mix for this Weight Watchers Cookies recipe. Make sure if you really want this to be just the 4 SmartPoints I calculated it for, that you use a basic white cake mix and not one of the super moist types. Those have added ingredients and more fat so will calculate at higher points values.
Also, I calculated this using ½ cup of sprinkles as the image shows. That said, I would not coat the entire cookie, but simply sprinkle a few on top of each cookie. As pictured, the cookie is rolled in sprinkles. I do not think this is necessary and would definitely be a little bit of a sugar overload for my personal tastes. If you removed some of the sprinkles, you could easily knock this down to fewer points.
Ingredients:
1 box of white cake mix
3 egg whites
½ cup Nonfat Plain Greek yogurt
½ cup Valentine's Day Sprinkles
Note: While the recipe calls for using parchment paper on the baking sheets, I have fallen in love with silicone baking mats. I find that they are almost always a foolproof substitute for parchment paper or aluminum foil. They are a one-time investment that can be washed between uses and work flawlessly.
Directions:
Preheat the oven to 350 degrees and line your baking sheets with parchment paper.
Combine your white cake mix, egg whites, and Greek yogurt together in a large bowl until well mixed.
Set aside the dough in the refrigerator for 10-15 minutes to chill.
Pour the sprinkles into a shallow bowl or plate.
Remove the dough from the refrigerator and scoop out using a small cookie scoop (I use the 1 tablespoon scoop). Roll into a small ball shape.
You can roll each ball into the sprinkles as shown, or simply place onto the baking sheet and sprinkle the top with a few sprinkles if preferred. Make sure to place 2-3" apart on the baking sheet.
Bake for 8-10 minutes.
Remove from the oven and transfer to a wire cooling rack.
This recipe makes 24 cookies.
