Cheesecake may be my all time favorite dessert. A fun Blueberry No Bake Cheesecake Recipe is easy to throw together and absolutely delicious. I love that this one, in particular, is only 5 SmartPoints per serving! I have made this over and over again, and most recently made it this summer for a simple but lower calorie treat.

Since we have since switched to a non-dairy diet, I can imagine making this with alternative options for the pudding. I will let you know if I find a good alternative since I know that pudding mixes don't always work well with non-dairy milk alternatives.
Pizzelle cookies are a thin wafer cookie that tastes similar to a waffle cone. I have found them at my local Aldi store on a regular basis, but you may also find them with gourmet cookies in many grocery stores or order them online.
Ingredients for Blueberry No Bake Cheesecake Recipe
1 sugar-free vanilla pudding mix
2 cups skim milk
1 container (8 ounce) Fat Free Whipped Topping
½ cup whipped cream cheese
10 Pizzelle cookies (vanilla)
1 pint blueberries
Directions for Blueberry No Bake Cheesecake Recipe
In a large bowl, mix together pudding mix and skim milk for approximately 5 minutes, or until pudding begins to thicken. You may use a hand whisk or hand mixer for this.
Once pudding has begun to thicken, fold in whipped cream cheese and whipped topping. Use a spatula or spoon for this so that the whipped items do not lose their volume.
Place a single layer of Pizzelle cookies over the bottom of a small baking or casserole dish. You could also use a trifle dish if preferred.
Spread ½ the pudding mixture over cookies, then sprinkle the top with ⅓ the blueberries.
Place ½ remaining whipped topping over the blueberries.
Repeat layer topping with a sprinkle of blueberries.
Cover and chill for 2 hours prior to serving.

This is best when chilled for at least 2 hours prior to serving, but it is a delicious no bake cheesecake recipe even if you serve immediately. One of the reasons I love this easy no bake cheesecake recipe is that it highlights my favorite fruit, and is super affordable and easy to make at the last minute. How much is a serving in this recipe? 1 cup???

Hi Debbie, This recipe, I don't measure traditionally. I simply divide the dish into 8 equal servings. In a casserole dish like this, it's pretty easy to separate into equal servings.
