A few months ago, my good friend Kari from Craft Create Cook shared this recipe with me to share with you. This Healthy Banana Cake Recipe is seriously delicious and so easy to make. Her recipe included regular granulated sugar, but I tried it using my new favorite substitute and LOVED the results.

Ingredients for Cream Cheese Frosting
2 SmartPoints per serving when divided by 16
Directions for Healthy Banana Cake Recipe
Preheat oven to 325 degrees (dark pan) or 350 degrees (glass pan).
Spray cake pan/casserole with nonstick cooking spray and set aside
With a mixer, cream shortening and Swerve sweetener together until fluffy (approximately 3 minutes).
Add eggs, bananas, and vanilla extract to the mixture and beat well.
In a small bowl, combine the all-purpose flour and baking soda mixing well.
Add flour and buttermilk to the liquid mixture and beat until just combined.
Pour into a prepared cake pan.
Bake for 20-35 minutes depending on pan choice (dark pan for 25-35 minutes, glass pan for 20-30 minutes). Check with a toothpick in the center to see if done completely.
Remove from the oven and allow to cool completely.
If adding cream cheese frosting, follow directions below:
Add cream cheese, butter, and vanilla to a mixer and beat well until smooth. Slowly mix in the Swerve confectioners sugar until combined. Increase the speed and whip until you have a frosting consistency you prefer. Usually 2-3 minutes. You may add a bit of water or more confectioners sugar as needed to get the texture you prefer.
Place icing in a piping bag and pipe in small amounts onto each square of the cake prior to serving.

- 1 cup Swerve confectioners sweetener

- Spray cake pan/casserole with nonstick cooking spray and set aside
