Here is what you will need:
4 medium-sized yellow baking potatoes
1 tablespoon of oil (olive or avocado)
½ teaspoon of sea salt

Step 1 - Cut your potatoes into thin slices (you don’t need to peel them unless you want to).
Step 2 - Put your potato slices into a large bowl of cold water and allow them to soak for approximately 20 minutes.
Step 3 - Drain the water and use paper towels to blot your potato slices until they are dry. You should also dry your bowl for the next step. This will help them from being soggy or lacking any crunch.
Step 4 - Place your chips back in your large bowl and add your oil and sea salt. Mix them together until all your potato slices are covered in oil and salt. Using an oil sprayer works best, but if you don’t have one, just make sure to drizzle the oil across the top layer of slices and mix well.

1 egg white

Baking Instructions
Step 1 - Preheat your oven to 350° F (176° C).
Step 2 - Use a baking sheet and line it with parchment paper, or use a pizza stone if you have one.
Step 3 - Whisk your egg until it is frothy in a small bowl. Then lay your tortillas out flat where you can brush them on one side with the whipped egg white.
Step 4 - Cut each whole wheat tortilla into eight individual triangles or wedges.
Step 5 - Place your cut pieces of tortilla onto the baking sheet with parchment paper and spread them out into a single layer. If you need to use more than one baking sheet, you can bake two sheets at a time; just be sure to rotate them in your oven halfway through the cooking time.
