As we have transitioned to eating organic as much as possible, some of our favorite easy snacks and treats have gone out the window. While I have always loved to bake, it has become a rarity in the last few years due to work, a bad stove and time constraints. These Organic Coconut Lime Muffins are a creation that came about to satisfy a craving while trying to stay healthier in the process. Not only do they include only organic products, but they are lower in fat and use no processed or refined sugars.
ORGANIC COCONUT LIME MUFFINS
INGREDIENTS
2 Cups Organic Unbleached Flour, sifted
1 ½ Teaspoon Baking Soda
1 Teaspoon Salt
¼ Cup Organic Raw Honey (we love the wildflower honey for this)
1 Tablespoon Stevia
½ Cup Lime Juice (Organic Key Limes or Regular Limes both work great)
½ Cup Organic Light Coconut Milk
1 Tablespoon Organic Coconut Oil
DIRECTIONS
Spray muffin tin with nonstick spray or spritz of coconut oil.
Preheat oven to 350 degrees.
In small bowl sift together dry ingredients and set aside.
In medium bowl beat together until smooth: honey, stevia, lime juice, coconut milk and coconut oil
Gently mix dry ingredients into wet. Be careful not to over mix as that will make the muffins tough.
Pour into muffin tins (typically ¾ the way full on each tin)
Bake at 350 degrees for 17-20 minutes or until desired golden brown on top.
I can't begin to tell you how satisfying one of these muffins is alongside my morning cup of coffee and some fresh fruit. Not only is it healthier overall, it packs so much flavor you will truly be amazed. They are definitely more moist than your typical muffin and almost cake like in texture, but they are still delightful. Enjoy these Ogranic Coconut Lime Muffins instead of a donut for breakfast this week. You won't regret it!
