A few years ago, I fell in love with this Easy Rice Pudding Recipe. I have since made adjustments to keep it lower in points while on Weight Watchers. There is nothing as wonderful as a flavorful rice pudding for dessert, and this fits into my points allowance on a regular basis!
Easy Rice Pudding Recipe

The slight hint of cardamom is what I love about this recipe. You can easily find cardamom in the spice section of any store, but if you aren't going to use it regularly, I recommend going somewhere with a bulk spice department and getting just 1-2 teaspoons at a time. That way you aren't wasting spice but will have it on hand when you are ready to make this rice pudding recipe.
Ingredients for Rice Pudding:
3 cups Minute rice
½ cup fat-free sweetened condensed milk
1 ½ cups unsweetened vanilla almond milk
¼ cup sliced almonds
½ teaspoon cardamom powder
Directions for Rice Pudding
In a large stockpot, combine all ingredients and stir well.
Bring to a boil, then reduce heat and simmer for 5-7 minutes stirring occasionally.
Let stand for 10 minutes and stir to combine flavors well.
Best served warm.

This easy rice pudding recipe truly is one of the most simple dessert options I have ever made. While many prefer slow cooking rice, I love Minute Rice for things like this dish. It makes it a bit lower in points, as well as making it convenient for a last minute option. We usually sprinkle a few shavings of almonds on top for added crunch, or my favorite way to serve it is with chunks of pineapple or mango mixture into the pudding.
